A SINGULAR TERROIR

At 900 meters of altitude, our mate grows in the heart of the biodiversity of the Santa Catarina region, in the great valley of the Iguaçu river, Brazil.

As with wine, terroir has a decisive influence on mate's final flavor. The minerals in the soil bring more or less bitterness, length or astringency to the final brew.

This region has the distinction of producing a high-quality mate that is particularly balanced, with herbal, floral notes and balanced bitterness.

TRADITIONAL ORGANIC FARMING

For over 100 years, our partner has kept their passion and know-how alive, growing a native yerba renowned for its original taste and famed for its smoothness.

The leaves of this organic yerba mate are harvested at maturity every 12 months. After harvest, the mate is dried naturally (smoke-free) before being enjoyed fresh, or going through an additional stage of aging or roasting.

What does the Organic Uruguay Mate taste like?
Tannic, sharp and floral: a dense, straight-talking flavour for drinkers who like their mate strong. This is our Uruguayan-style blend, with a very fine cut.
What cut is this mate?
A very fine cut, rich in powder (30 to 40 %), typical of the Uruguayan style. It gives a dense, tannic flavour with a long finish. See our article on the different yerba mate cuts.
Does the Uruguay blend come from Uruguay?
No: Uruguay refers to a style of cut, not to an origin. Our yerbas are grown in Santa Catarina, in Brazil; the blend follows the Uruguayan cut, very fine and rich in powder, which gives a dense, tannic cup. A blend is defined by what goes into it, not by where it was grown.
Does this mate call for a particular bombilla?
Its very fine cut calls for a more meticulous preparation. Every bombilla we offer is suited to the Uruguayan cut!
What difference does smoke-free drying make?
A mate dried without smoke keeps its own clean flavour profile, free of the wood-fire notes that mask the terroir. It is a choice of taste and of health, since it also avoids PAHs — and it is what sets our mates apart from yerbas dried the traditional way over an open hearth.
Why does organic mate cost more?
Organic production genuinely does cost more: lower yields, more demanding work, certification audited every single year. And yet, thanks to the trust of our customers and to working directly with our growers, we offer the cheapest organic and Demeter mate in France — without giving an inch on quality.
How do I prepare this mate in a gourd?
Fill the gourd two thirds full — allow 25 to 30 g of leaves per 200 ml — tilt it to form a slope, slide the bombilla into the hollow, then pour water at 70–80 °C, never boiling. See our guide to the traditional preparation of mate.
How much caffeine does this mate contain?
Our laboratory analyses measure around 140 mg of caffeine per 1 L of brew, which is one full mate session: as much as a coffee, but released far more gradually.
How does it come packaged?
Your mate comes in a 1 kg resealable pouch. It opens at the back by pulling a tab, which forms a pouring spout so you can fill the gourd without spilling. Then close the zip again and store the pouch away from light and strong smells.
How long does this mate keep?
Two years at least, provided you close the zip after each use and keep the pouch away from light and strong smells. Mate leaves are highly sensitive to surrounding aromas: keep them out of the spice cupboard and away from the coffee.
Is this mate certified organic?
Yes, and it also carries Demeter certification — the biodynamic label, stricter still than organic. Our entire range is certified organic by ECOCERT and Demeter.
Where does this mate come from?
It is grown in agroforestry in Santa Catarina, in the Iguaçu valley in Brazil, at 900 metres of altitude, by our partner grower whose family has farmed there for more than a hundred years. The leaves are dried without smoke. See our article from the soil to the cup.
